Avocado is the new superfood! The fruit was revealed as the most pinned food trend of 2015 on Pinterest, and it seems as though we can’t flick through our Instagram or We Heart It feed without seeing an avocado toast or two. It is almost as frequent as the shameless #selfie! We have all bitten into the obsession, and for good reason:
Not only is the creamy textured and delicious tasting fruit trendy and #instafriendly, it actually has a lot of great benefits for your skin and body. While it is true that avocados are high in fat, almost two-thirds of the fats they contain are the heart-healthy monounsaturated fats, like those found in olive oil. These fats are good for you, and actually helps build collagen to keep your skin firm! In addition avocados are a good source of B vitamins, which help you fight off disease and infection. They also give you vitamins C and E, plus natural plant chemicals. The fruit is also low in sugar and high in fibre, which helps you feel full longer.

Toast does not sound like the most intriguing breakfast or lunch option, but as you include avocado in there it suddenly gets a lot more exciting. No matter if you like to keep it simple or if you want to experiment, an avocado toast is the perfect choice for a great meal at any time of the day. You can go for a traditional one with sprinkles of salt and pepper, or add an egg, bacon, chili flakes or anything else you may like. It is quick and easy, but also super yummy and filling. Half of a mashed avocado is more than enough for you to spread on two pieces of toast!
Tuesday: Avocado Smoothie
A smoothie is always a quick and delicious idea for breakfast, lunch or a snack. Add an avocado (or two) to your mix and you will get a creamy and nutty texture that will melt on your tongue and straight into your heart. Drink it on-the-go in a cup or pour it into a bowl and add some fresh fruits and berries. Smoothie bowls are definitely an Instagram worthy choice.
Wednesday: Avocado Banana Pancakes
Sounds weird, right? Don’t bash it ‘til you try it. It is hump day and we need something extra tasty for breakfast. I think we can all agree that pancakes is the best thing ever (next to pizza, of course), right? The weekend is here and we are ready to drink a glass (bottle) of wine or two. It is the ultimate pre-drinks night and our faces will be stuffed with tortilla and other chips. So what is the perfect accompany to that scenario? A kickass guacamole of course. A simple and quick guacamole only acquires some avocados, garlic, onion, chili and seasoning, but if you want to go that extra mile – why not add some cheese to it?

Saving the best for last, every Sunday deserves a chocolatey treat. And if that treat also happens to be healthy (ish), then what are you waiting for? Avocado brownies might sound a bit peculiar, but I promise you they taste just like the real deal. Might I even try to say they are better.
