An Overthinker’s Guide To Making Delicious Breakfast Sandwiches

Ever planning a breakfast for friends or family? Or looking for a quick and easy on-the-go meal for your kids? Look no further! This is the way to make simple breakfast sandwiches for the overthinkers. What you need:

  • 4 English muffins
  • 2 tablespoons butter, softened
  • 4 large eggs
  • 4 slices cheese
  • Salt and pepper
  • 8 slices of cooked bacon
  • Other toppings like arugula, spinach, hot sauce, etc
  1. Preheat the oven to 400 oF.
  2. Line a sheet pan with parchment paper or foil (to make cleanup easy). Slice open the English muffins and spread them in a single layer on the sheet pan. Spread the top halves of the English muffins with butter (leave the bottom halves plain).
  3. Using your fingers or a spoon, pull most of the bread out of the center of the bottom halves of the English muffins, forming a “nest” for the eggs.
  4. Crack an egg into each of the “nests” you made in the bottoms of the English muffins (don’t worry too much if some of the egg drips over the edges), and season the eggs with some salt and pepper.
  5. Bake until the whites start to set around the edges but are not fully cooked: about 5 minutes.
  6. Add the cheese slices to the top halves of the english muffins and return the whole pan to the oven to keep baking until the eggs cook to your liking and the cheese melts.
  7. Add bacon and other toppings of choice, and enjoy!
