POP, Lock and Drop it: 6 Popsicle Recipes To Try This Summer

Popsicles are a fun way to get into the spirit of summer. Whether you’re having one to cool off after a run outside, ending a beach day with a sweet treat, or making them with friends to try something new, there can be so many varieties to popsicles that the possibilities are endless. 

These yummy treats can be enjoyed by children and adults alike. You can purchase popsicle molds at any HomeGoods or even online from Amazon. 

Here are six popsicle recipes to try this summer.

1. Blackberry Lemon Popsicles

  • ⅔ cup lemon juice, plus zest from lemons
  • 2 ½ cups vanilla greek yogurt
  • 2 ½ cups blackberries
  • 2 ½ cup mixed berry Greek yogurt

In a medium-sized bowl, whisk together lemon juice, zest, and vanilla yogurt. Set aside.

Puree blackberries and mixed berry yogurt. Set aside.

Layer the popsicles as follows: one tablespoon lemon, one tablespoon blackberry, repeat. Swirl layers if desired.

Gently tap the molds on the countertop to remove any air bubbles. Insert the popsicle sticks, then freeze for at least six hours, or overnight.

2. Easy Strawberry Banana Popsicles

  • 1 (3 oz.) package strawberry gelatin
  • 1 cup boiling water
  • 1 banana
  • 1 cup yogurt or ice cream. Blend well and pour into molds.

Dissolve gelatin in water. In a blender, mix gelatin mixture, banana, and yogurt. Pour into molds and freeze.

3. Chocolate Hazelnut Soy Pops

  • 1 cup vanilla soy milk
  • 1/2 cup fat-free milk
  • 3/4 cup fat-free vanilla Greek yogurt
  • 1/3 cup Nutella
  • 8 freezer pop molds or 8 paper cups (3 ounces each) and wooden pop sticks

Place milk, yogurt, and Nutella in a blender. Cover and process until smooth. Pour into molds or paper cups. Top molds with holders. If using cups, top with foil and insert sticks through foil. Freeze until firm.

4. Shirley Temple Popsicles

  • 1 cup orange juice
  • 1 cup lemon lime soda (I used 7-up)
  • 10 tsp grenadine syrup
  • 10 oz jar of maraschino cherries, cut in half
  • 10 popsicle sticks

Gently mix together the orange juice and lemon lime soda. Pour into the popsicle molds, but only fill 3/4 of the way. They will expand. Add one teaspoon of grenadine to each popsicle mold.

Drain the cherries and cut each in half. Distribute evenly between the ten popsicle molds.

Cover and add popsicle sticks to each popsicle. Freeze overnight.

To release, run water on the bottom of the mold to loosen. Store in an airtight container or zip top bag.

5. Apple Juice and Berry Popsicles

  • 1 1/4 cup apple juice, (all natural, no sugar added) (either store bought or freshly juiced)
  • mixed berries, (enough to fill each popsicles mold)

Slice strawberries, then fill each popsicle mold with the mixed berries. Put a few of the sliced strawberry pieces against the edge of the popsicle molds. (In total, I used six blackberries, 18 blueberries, 12 raspberries, and five strawberries to fill six popsicle molds.)

Pour apple juice into the popsicle molds and on top of the berries until filled to the top. This was 1 1/4 cup of apple juice for me. Top each popsicle mold with the popsicle sticks.

Freeze for at least four hours.

And one last one for those over 21 to enjoy…

6. Cherry Apple Whiskey Sour Pops

  • 3 c. cherries
  • 1 large green apple
  • 1 lime
  • 1 c. whiskey
  • 1/2 c. sweet and sour mix (recipe follows)

SWEET AND SOUR MIX

  • 1/2 c. water
  • 1/2 c. sugar
  • 1 c. lemon juice

To make the Sweet and Sour Mix: Heat sugar and water in a saucepan until sugar dissolves. Add lemon juice and stir. Cool before using.

Pit cherries and peel away apple and lime skin. Cut fruit into quarters. Blend all ingredients. Pour mixture into popsicle forms and freeze for two hours. Insert popsicle sticks and freeze overnight.

All these recipes are a quick, easy, and tasty way to get creative with cooling off this summer.
